Installation   Maintenance 'HT'   Maintenance 'MT'  Replace 'MT' Bushing

      UGOLINI 'HT' /SANISERV/ TAYLOR GRANITA MACHINES    

Installation:

Proper installation of the machine is very important. Some important factors include the following:

a- allow 3" space around the machine. Do not back the machine to the wall.

b- do not place a heat generating equipment (like coffee brewer espresso machine etc.) near the left side of the machine. The condenser fan draws warm air in and slow the cooling of machine. 

c- make sure the machine is connected to a dedicated outlet with minimum 15 amps for a 2-bowl and 20 amps for a 3-bowl unit. If the voltage at the machine drops to 108V or less, it will not freeze properly and even shut the compressor off.

Maintenance of 'HT' model

Weekly maintenance :

1- clean the condenser coil (radiator) to allow good ventilation.

2- clean the bowl, sanitize and lubricate moving parts as per health local health department regulations.

Maintenance every three month:

1- replace gear shaft o-rings (Dwg. part # 38 ) and lubricate.

2- replace rear seal (Dwg. part # 10) and lubricate.

3- replace front bearing (Dwg. part # 37).

Replacement of worn plastic parts

During weekly cleaning, check the following parts for wear

a- check the five auger parts (item #12)  (auger parts chip at the point where they lock into each other. Chipped piece overrides the piece in front & pushes the bowl forward. This will cause visible back & forth movement on the serving handle. Replace the chipped auger part:

1- replace thrust washer (Dwg. part # 8) every 6-8 months. Worn thrust washer will have a pimple like wear growth in the center.

2- replace outer spiral (Dwg. part # 13)every 6-8 months. When worn, the tip of the outer spiral will appear slanted on side.

3- Bowl gasket should be firmly tight and snug on the ledge. Replace it when soft or loose in the seat. It takes color from the food color and appears ugly. Replace it every 6 to 8 months.                         

General care and checks:

a-  avoid serving over-frozen product. Product with good consistency flows evenly and in a continuous drip when the handle is pulled. When the flow is chunky, lower the viscosity immediately. Over frozen product does not taste as desired. Over-frozen product increase load on the plastic parts as well as the gearmotor and reduces their life.

b- learn how to adjust viscosity.

c- do not leave the machine in  "freeze mode" overnight.

d- for better visibility, keep the bowls full with product

e- Keep a constant check on the mixing ratio of the product. Check the brix level frequently to avoid over-freezing. Frequently count the turning of the outer spiral. It is designed to turn 38 times in one minute. Slower speed will mean the gearmotor needs check for lubrication and cleaning.

f-  Check the Microswitch frequently if it opens and closes easily. When stuck in off position, the product does not freeze and when stuck in on position, the product freezes into solid block of ice due to non-stop freezing. The pin plunger should move in and out when the gearmotor is manually pushed to the left and released.

Magnetic drive (MT models)

Preventive maintenance     

The following guidelines for Ugolini slush machines will help prevent unwarranted breakdowns.

1-  Clean condenser-filter and condenser-coil every week. Condenser coil is like the nose of the air-cooled machine and must be kept clean. No excuses. The machine is air-cooled. It is important that the air circulating though the machine is maximum to keep the Compressor, gearmotor and fan motor cool. Clean the condenser coil (radiator). Clean fan blade (impeller) from dust collecting on the blade. Clean external condenser filter, where provided. Use the proper filters provided by the manufacturer. Cheap foam sheets can reduce air flow and do more harm.

2-  Lubricate auger bushing and thrust washer weekly. Replace rear wall front bushing (Dwg. part # 10 and auger bushing (Dwg. part # 11) every three to four months if the machine is on 24 hours.

3-  Lubricate the faucet assembly (o-rings, plunger)

4-  Use product with minimum brix at 13. Product with brix lower than 12 will freeze fast and auger will not be able to scrape the frozen product fast enough. This can cause damage to the auger and excessive load on the gearmotor.

How to replace Auger bushings

 

     Inner Auger is supported by two bushings - male bushing (part # 10) & female bushing (part # 11). The two bushings prevent direct contact of auger with the rear wall. If the auger is not held straight out, the rear cup will scrape the magnet housing and result in the perforation of the rear wall. Prevent this disaster by replacing these bushings every 4 months if the machine is on 24 hours and every 6 months if the machine is used during the day only or replace every 12 to 18 months if the machine is used on the week-ends only.

      When a used machine is purchased, this part should be the first to examine and replace. The chances are that the previous owner has never replaced these bushings.


Removing the Rear wall bushing - part # 10

    Part # 10 is simply pressed on a plastic stub (without threads). To remove it, grab the busing with a nose pliers (from the side) and pull straight, away from the rear wall. Or carefully insert the sharp edge of a knife between the rear wall and the lip of the bushing (without damaging the rear wall) and slowly, carefully push the bushing away from the wall. It may be necessary to press the sharp edge of the blade from the top and from the two sides of the bushing, before it comes out far enough to be pulled out.

Removing the Auger bushing - part # 11:

 

    The auger bushing is pressed into recessed space in the back of the

   auger. It sticks tight and may be difficult to pull out due to dried syrup.

    Use a flat screwdriver to pry it out or grab the lip with a cutting pliers

   and pull out.  Lubricate the hollow space with food grade lubricant

   before pressing  the new bushing in.
